Meat- based dishes , especially pork , tomatoes and vegetables are excellent almost everywhere .
Don't forget fish, thanks to the lakes (a typical local fish is whitefish
) and the distance from the sea (Civitavecchia, Orbetello, Tarquinia are only 60-90 minutes away).

The oil from Tuscia is particularly good

Some places to eat typical food, chosen from my personal experience, as to say, there are definitely others, of these I have direct knowledge.

It is always good to make reservations and, in case, ask about specific dishes.

Ristorante al Poggio, la Bettala, l’Osteria degli Orti a Vallerano, Linetta a Canepina, La capanna del Pescatore a Montefiascone, Il Labirinto a Viterbo, ristorante La Baita alla Faggeta del Cimino, ristorante Riva Felice al lago di Vico. La Pergoletta a San Martino al Cimino.

For purchases of local meats, cold cuts, and cheeses, I highly recommend  Salumificio Coccia a Viterbo.​​​​​​​

For wines, the centuries-old winemaking tradition of Montefiascone, at Cantina Stefanoni. and the Cantina dei Viticoltori dei Colli Cimini winery in Vignanello especially for whites
